Not that cheesy potatoes need a special introduction, but this recipe is melt in your mouth comfort food that pairs oh so perfectly with a nice filet or chicken breast. Double the recipe and you’ve got a Thanksgiving side worthy of center stage. Triple the recipe, put on pajama pants and pour yourself a big glass of wine and you’ve got my perfect Friday night.
What you’ll need:
-1 bag Melissa’s white potato spuds
-2 or 3 large sweet organic potatoes, sliced into 1/2 in rounds
-1 organic onion, chopped into slivers
-2 garlic cloves, chopped
-1/4 cup organic Parmesan cheese
-1/4 cup organic bleu cheese or Gorgonzola, cubed
-Mary’s gone crackers organic crumbs http://www.marysgonecrackers.com/your-products/crumbs or any gluten free/organic bread crumbs you like (or hell, what do I care… any bread crumb you’ve got will be just fine!)
-sea salt, pepper, Italian herbs to taste
-1/4 cup pine nuts (optional)
