Overnight Oats – My Summer Weight Loss Secret!

I live for a warm bowl of gooey oatmeal with bananas and cinnamon on a cold winter morning. Oatmeal is my perfect go to when I have a big day ahead of me.  It keeps me satiated and provides magnesium, fiber, potassium, a wee bit of protein (I usually add more plant based), and best of all – absolutely no sugar. Which means no crashing an hour later and ravenously returning to the cabinets.  From a weight loss standpoint, oatmeal is a slam dunk for me.  If I start every morning with a serving of gluten free rolled oats, I know I’m setting myself up for a great day of eating.

 

But who the hell wants piping hot oatmeal in the summer? Absolutely no one.  And thus, overnight oats was born.  The world’s easiest and quickest breakfast.  And arguably one of the easiest to digest!  Have I mentioned that they taste like dessert?!?!

So how do you make this weight loss miracle dessert superfood bowl of goodness? 

Recipe for Overnight Oats

Base Ingredients:

-1/2 cup old-fashioned rolled organic oats – gluten-free! Rolled is important, they are higher in fiber! 

-1 cup almond milk (or coconut milk or hemp milk)

-Sweetener: Either 1 tsp of raw honey, agave or Grade A Maple Syrup or 2 drops liquid stevia

Dress it up with any combination of:

 cinnamon, nutmeg, fresh or frozen berries, chopped peaches or apples, chopped nuts, coconut flakes, banana slices, nut butter, trail mix, dried fruit, plant-based protein powder, applesauce, superfoods powder or cereals, alcohol-free vanilla extract, chia seeds, ground flaxseed… and the list goes on!

To get a thicker consistency:

Add 1/2 tbsp coconut flour or 1/2 tbsp Xanthum Gum

Directions: 

Mix ingredients in a sealed container or mason jar, stir, refrigerate overnight.  THAT’S IT! No cooking, no making a mess in mixing bowls, no heating up the next morning!  You just take it out of the fridge, plunge your spoon in, and enjoy!

Here’s one I made for the post that was deeeeelightful.

Step 1:

Mix:

-1/2 cup Trader Joe’s Superseed and Ancient Grains (sprouted buckwheat, sprouted millet, chia seeds, flax seeds, red quinoa, hemp seeds, and amaranth – I mean talk about a winning combo for only $4.99 for 8 ounces!)

-1 cup unsweetened organic vanilla almond milk

-3 drops of stevia

-handful of organic frozen blueberries and blackberries

-sprinkle of cinnamon & nutmeg

-1/4 tsp organic (no alcohol) pure vanilla extract

-1/2 tbsp organic coconut flour

 

Step 2: 

Stir and refrigerate overnight.

Step 3:

Wah-lah!  For picture purposes, I added bananas, superfood berry cereal, coconut shavings and cacao nibs

Version 2:

Organic chocolate hazelnut spread drizzled on top (yes. basically nutella.)
 

…..but let’s get serious.  The beauty of overnight oats is the ease of preparation. This is what it typically looks like when I make my bowls of goodness.  I’ll make 2-3 at once and leave them in the fridge!  Without fruit, the oats will last 1 week in the fridge. CkiVds5VEAA1Oix
